Mixed Berry Cobbler
I was cleaning out the freezer and needed to get rid of some mixed berries. After doing a little shelf diving and taking inventory of what I had around the house, I decided that I would use the ramekins that I’ve been meaning to use (for something other than Cheerios) for months!
Ingredients:
- (2 TBSP) flour
- (2 cups) of mixed berries, thawed
- (1/4 cup) sugar
- (1 cup) flour
- (2/3 cup) brown sugar
- (7 TBSP) butter, room temperature
- Pinch of salt
- (1/2 tsp) cinnamon
Instructions:
- Preheat oven to 375 degrees.
- Mix 2 TBSP flour, berries, and 1/4 cup of sugar in a bowl.
- Mix the rest of the ingredients in a separate bowl.
- Using a paper towel, oil the (4) ramekins with vegetable oil.
- Place the berry mixture into the ramekins first, and then scoop the dry mixture on top.
- Bake for 20-30 minutes or until the berries are beginning to bubble over.
- Scoop on fresh berries and whip cream. Then enjoy!
Why do you own ramekins? I thought they were only for serious housewives and Rachel Ray..lol. No honestly, everytime I see them in stores I want to buy them and then I am like, wait, what do I even use them for?… looks yummy by the way, I want some.
Pretty…how many ramekins would a farmer eat?
The whole point of ramekins is actually stopping at the first one (and being able to cook things quickly), but, if I had to guess…2 probably : )
