Mixed Berry Cobbler
I was cleaning out the freezer and needed to get rid of some mixed berries.  After doing a little shelf diving and taking inventory of what I had around the house, I decided that I would use the ramekins that I’ve been meaning to use (for something other than Cheerios) for months!

Ingredients: 

  • (2 TBSP) flour
  • (2 cups) of mixed berries, thawed
  • (1/4 cup) sugar
  • (1 cup) flour
  • (2/3 cup) brown sugar
  • (7 TBSP) butter, room temperature
  • Pinch of salt
  • (1/2 tsp) cinnamon

Instructions: 

  1. Preheat oven to 375 degrees.
  2. Mix 2 TBSP flour, berries, and 1/4 cup of sugar in a bowl.
  3. Mix the rest of the ingredients in a separate bowl.
  4. Using a paper towel, oil the (4) ramekins with  vegetable oil.
  5. Place the berry mixture into the ramekins first, and then scoop the dry mixture on top.
  6. Bake for 20-30 minutes or until the berries are beginning to bubble over.
  7. Scoop on fresh berries and whip cream.  Then enjoy!
